Cooking Instructions:

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. Soak the rice in water for 4-6 hours or overnight.
  3. Drain the soaked rice and grind it into a smooth batter, adding water as needed.
  4. Ferment the batter for 8-10 hours or until it doubles in volume.
  5. Add salt to taste and mix the batter well.
  6. Grease the idli molds and pour the batter into them.
  7. Steam the idlis in a steamer for 10-12 minutes or until cooked through.
  8. Remove the idlis from the molds and serve hot with chutney and sambar.
